those do look like thistles. Do you think they have gone by? The other tall bulblike plant in the next picture looks like it could be an onion or in that family. Perhaps someone else will be able to identify it for you.
Luke and I walked by these thistles again the other day and noticed the whole top of the plant turns this electric bluish tint. There were others that turn white. Extraordinary!
