Color: Carrot Soup

Hi Adam! we ended up with so many carrots, so I roasted them, then added them to my soup pot already cooking with sauteed shallots, garlic and a little ginger and chicken stock. Then I ground it all up, voila, carrot soup! It was really good. We can make it when you visit in July. Love you!
